Brrrrrr.

It’s officially the last day of summer. And today, in the foothills of Denver, it snowed. Here comes a cold Minestronewinter.

Since I have goose bumps, how about some really good (pastaless) minestrone to warm the bones.

 

Ingredients:

Olive oil, chicken broth, white wine, medium onion, garlic, tomatoes, brocoli, garbanzo beans, carrots, bell pepper, salt and pepper

Directions:

Heat the olive oil and add the onions and garlic into the pan. Cook for about five minutes, then add the chicken broth and white wine. Let simmer. Then add all of the vegetables and beans. Let it all cook together for about 15 minutes.

Then, spoon in. For an extra garnish, add parmesan cheese and crispy tortilla strips on top.
